I accidentally bought a 96 ounce can of tomato paste at costco - I meant to grab the same sized can of crushed tomatoes for a big spaghetti dinner and it really isn't worth a trip back because the can was just $2.50.
All I can find are recipes that use less than 6 ounces - any one have any suggestions?

I make large batches of pizza sauce to do what Simon says.
Try making a huge batch of simple marinara to freeze. With marinara you can doctor it up later on to suit the particular meal you need to make.

I was going to used the crushed tomatoes to make a big batch of marinara... but tomato paste is concentrated tomato so I wasn't sure if I could just water it down to make a sauce.

You can freeze tomatoe paste for future use. Use a cookie sheet and drop in 1 tablespoon at a time. Freeze then take out cookie sheet and lift off frozen blobs into a zip loc and you can take out what you need a tablespoon at a time. You could use an ice cube tray too.
I use the cookie sheet method for lots of things, like blueberries or raspberries when in season. Whole tomatoes work this way too.

I have a vacuum sealer, but I wasn't sure how messy it would be getting it into bags. I think I will freeze small ice cream scoop sized ( 2 oz scoop) so it will go a little faster and finally watch the how to video and learn how to use the sealer so they won't get ice crystals. I know I had read somewhere about freezing berries before vacuum sealing them, but I never thought of freezing something like tomato paste.

I use an icecube tray then pop them out and vacuum seal them.
