Anita, How do you buy your fish? I remember reading something about sushi grade fish, but I wasn't sure how to order it at the fish counter. H We go to China town early Saturday morning and get it FRESH! Sometimes we order it from the local independent market. The key is that it is no more than one day old. We have also had it for lunch at Hedo when Art has caught tuna that morning. I'm not much on Sushi but I love Ceviche and like Sushi Ceviche has to be fresh. The way we do it you can't get much fresher. If I catch a Grouper while we are out on one of our fishing trips (I've been about twice a week lately) when we get in we clean our fish at a cleaning station at the marina and the cleaning station is about ten yards from the back door to the kitchen. The first fish I clean is the Grouper, once I have the first fillet off the fish I'll cut part of it into one inch squares and hand it to the Chef through the back door of the restaurant then I go back to cleaning the rest of my fish. The Chef will mix up a marinade of vinegar, pepper sauce, lime juice and a few spices. Once we're finished cleaning the rest of our fish, about thirty minutes, we head over to the Bar where the Chef has our Ceviche and a couple of cold beers waiting for us. We're talking a few hours from swimming to the plate. Now that is fresh Ceviche ! Hank

lol that is more like sushi with lime juice rather than the ceviche I am familiar with. When my mom makes it we have to let the fish marinate in the fridge for at least 24 hours until the lime juice has cured/pickled the fish and it is flaky. Then she adds diced tomatoes, green olives, onions, cilantro, finely chopped jalapeno. Basically pico de gallo with olives and fish.
Your version sounds pretty good so I may have to experiment and try it out.

Hilary The combination of acids (vinegar, lime juice and pepper sauce) will actually "cook" the fish in about a half of an hour. I did a Ceviche style (you actually grill it for about six minutes)Mahi Mahi yesterday. Six hours from swimming to plate. GRILLED MAHI CERVICHE STYLE 4 skinless mahi-mahi fillets, approximately 2 pounds 2 teaspoons kosher salt 1/2 cup diced red onion 1/4 cup freshly squeezed lime juice 1/4 cup freshly squeezed orange juice 1 tablespoon minced jalapeno 1/4 cup dark brown sugar, packed 1/4 cup tequila 1 tablespoon olive oil 1/4 cup freshly chopped cilantro leaves Rub the fillets with kosher salt and set aside. In a non-reactive bowl, combine the onion, lime juice, orange juice, jalapeno, sugar and tequila. Mix to dissolve the sugar, and add the fillets to the bowl. Marinate in the refrigerator for 2 hours, turning the fillets once after 1 hour. Remove the fillets from the marinade and set it aside. Pat the fillets dry with paper towels and lightly coat with the olive oil. Heat a grill to high and place the fillets over direct heat until they are just cooked through - opaque at the center but still moist, approximately 3 to 4 minutes per side. While the fish is grilling, transfer the reserved marinade to a saucepan and heat until it is reduced to about 3/4 cup. Using tongs, remove the fillets to serving plates and divide sauce equally among them. Top with the cilantro. Hank
