Seriously, I love headcheese, but mine is not made with pork, its fish. My mother taught me to make it like her mother, a traditional Estonian party dish. All you need are the heads of a bunch of nice firm whitefish to boil for the gelatin adding, carrots, onions and cooked fish chilled in a mold served cold with flavored vinegar. Yum. I don't have the exact reciepe at work, but if anyone is REALLY interested I can post it.
It's a good use of usually discarded fish heads. When I was young my mom would get them free at the market.

The Vietnamese markets in Dallas are more upscale now, but a dozen years ago, when I went shopping with my wife, I would have to avoid the aisle with the open ice chest (no ice) full of catfish heads (and plenty of flies). The smell would literally make me gag. The fish market is Saigon was pretty ripe too. The weather is 95-100, humid, and the market is open air. They clean fish and never wash away the scales, guts, etc. The floor is juicy/crunchy with rotting fish parts. Yum.
