My sweet wife used to help her grandmother sell fruit in the Tan Dinh Market in Saigon. She can pick out perfect specimens of any fruit. For pineapples:
1) The eyes should be well developed and more gold than green.
2) Hold it to your nose and smell it. It should have a strong sweet smell.
3) Pluck out one of the center leaves. It should pull out easily.
4) Squeeze it. If it is not firm, it is overripe.
