In another started by BB he talked about Holiday treats.
Lets talk about holiday meals
Well here is our holiday menu's this year. We have 3 meals in which we (Denice and I) Friday and Saturday totally cook or take part in helping to prepare.
Friday night menu: At our house Guest ( the kids, grandkids, son-in laws parents, Denice parents and us)
Salad, garlic bread, ravioli, cracked crab, BBQ tri tip, banana cream and coconut cream pie.
Saturday morning menu: At our Daughters house Guest ( the kids, grandkids, my parents and us)
Scrambled eggs, hash browns, Italian seasoned sausage, regular sausage, and home made sweet rolls with icing.
Saturday evening menu; At our house Guest ( my parents, our oldest daughter and us)possible a couple of friends.
Salad, mashed potato's, vegetables, BBQ prime rib, French bread, apple pie, ice cream, and misc sweets.
Those menus don't count all the booze, wine, beer, and picking at things before meals.
We are well stocked up on Alika Seltzer.
And I wounder why the scale keeps saying you getting fatter pal.

That looks like a nice menu, Joe. As for me, I'm just nuking canned veggies in the microwave for the next few days up until the time I leave for my trip. Saturday afternoon, one of my favorite Drunk Brunch restaurants will be open (much to my surprise and delight) so I may go there to throw myself a send-off party. Hope I remember to pack before I go there, tho -- I'd hate to have to come home, sober up and THEN pack!

Lets see, good sized ham in the fridge, sweet potatoes, baked corn (a Pennsylvania Dutch treat that I have come to know and love), all the basics, BUT the best part is that the cookie making machine is in full operation. One batch of snickerdoodles is almost gone, molasses cookies are in production, with peanut butter cookies (with the Herseys kiss on top) and a second batch of snickerdoodles promised, and some oatmeal cookies too.

I would be tempted to stop by Joe's for the Italian sausage and garlic bread, Gordon's for the home made peanut butter cookies (you might as well staple those to your ass - that's where they are going), and Beeb's for the New Year's trip to Hedo.
We have the Vietnamese side of the family coming in for Christmas and the menu reflects that. Luk Lak (cubes of sirloin marinated in garlic sauce and stir fried in olive oil), scallops cooked with lemon grass, water spinach, and rice, French bread. Flan and ice cream with blueberries for dessert. Most of these dishes are of French origin with a few SE Asian touches. My wife is part French (like so many Vietnamese) and this is reflected in her family's food tastes. It's good stuff, so I am not complaining.

My mother still insists on cooking Christmas dinner, and since they have the biggest house, it makes sense. She will have some sort of homemade pasta, sausage, and meatballs, and probably a small turkey or ham for variety. With my siblings and their kids and in-laws, it lwill be an army of about eighteen souls........Jake

Our family is limited to Art's dad and us for dinner which is always at our house. This year the three of us will have Alaskan king crab cooked on the grill basted with garlic butter, stir fry green beans with almonds in oyster sauce and wild rice with mushrooms baked in the lobster stock I made this summer. Desert is pumpkin pie and Jamaican Blue Mountain Coffee with rum cream. We stopped making any appetizers a few years ago because we don’t want to fill up or lesson the dinner experience. We all seem to eat less these days, especially Art's 80 year old dad.

I usually send mine to a therapist for a few sessions to reduce the potential of trauma.

Just walked out of the store with a beef brisket, pork roast, and turkey breast. Gonna break out the smoker late tomorrow night. How do you prepare your brisket before smoking? I make sure I trim as much of the fat as I can and then I use a dry rub. Basic stuff in there like salt, chili powder, black pepper, garlic powder etc. I keep a mop sauce available in case it starts to dry out over the low heat. Nothing fancy in there either. I think it is beef consomme, Worcestershire, cider vinegar, garlic & chili powder, Tabasco, etc. I don't like to go too overboard with the spices because I really like the cut of meat to stand on it's own merits. I just want to boost the taste slightly.

Do you use water pans in the smoker? Absolutely. And I usually keep it filled mostly with citrus juice.
