We have a bumper crop of apples this year. The freezer is already full with the apples that we have already processed and the other fruits and berries from this season.
Used to be, when we had the horse, we would save the leftover apples and give them to her through the winter.
Well, we didnt want to pitch all of these great apples so we decided to get a press and give a try a making cider. Given my natural tendencies, my mind quickly progressed to the thoughts of hard cider/applejack.
After making beer, this process looks pretty simple. The question is, do any of you have any experience making hard cider, and if so, any favorite recipes.

Just saw this thread: But no I don't know of any recipes but that's a good idea. Fresh hard cider around a fire during the holidays, football etc...
We have 3 apple trees and they had a huge crop this year too, it might have been the rain or cool spring and summer. Some years there's nothing at all.

The shredder and cider press came the other day. This afternoon is harvest time, but production wont start until after next weekend.

If you make a hard version keep us posted on how it goes. Hard cider with a slices of orange rind sound good.

Very good idea. I've been picking them and tossing them in the woods for the critters in Michigan. (My apple trees are in Illinois.) Like I need another fall harvest project.
I'm making blueberry jam this weekend. I have 10 pounds frozen from August. Christmas soon come. Most people in my gift giving circle don't need or want anything and seem to enjoy my home made eats.

My grandmother used to make crabapple jam, who knew there was a use for that fruit. I loved it as a kid, ahh the memories.

Never tried harvesting crabapples, we always left them for the animals. Interesting.

Yes Gordon, they made an excellent jam and I never recall seeing it even as a niche product either. She was a true country farm woman from Pennsylvania and naturalist if there ever was one.

My mom made pickled crab apples. Not like dill. It is a sweet and sour pickling with sugar and cider vinegar with cinnamon and cloves. I still use the recipe for picked pumpkin and picked pears. I should plant a crab apple tree...hmmmmm.

Not the same thing of course -- but while at the Hedo Reunion this summer a guy was giving out cherries "pickled" in grain alcohol. I ate one and the alcohol effect hit me instantly. It definitely wasn't a Coors Light.
